Amish Cold Potato Salad Recipe

Ingredients:
1      tablespoon(s)      Caraway seed  



1      teaspoon(s)      Dry mustard  



1/2      cup(s)      Mayonnaise  



6            Russet potatoes large, washed  



      to taste      Pepper  



1            Onion, finely chopped  



2            Hard-boiled eggs, chopped 
Directions:
1. Cook potatoes until tender; cool, peel, and dice into medium-sized cubes. 2. Combine vinegar, mustard, salt, pepper, and caraway seeds in a bowl. Slowly whisk in oil. Pour over potatoes and let stand for 1 hour. Toss with onion, mayonnaise, and egg. 3. Garnish with paprika.
